Beach day | Malibu

Hi friends! Today was such a beautiful Saturday in sunny California…so Calvin and I decided to make the most of it in Malibu. After I got off at work around 3pm, Calvin picked me up and we drove down on Pacific Coast Highway towards Malibu. Our first pit stop was to Malibu Seafood Fresh Fish Market & Patio Cafe to get our grub on. We ordered the seafood combo (which included fried/battered shrimp, fish, squid, scallop over a bed of fries), one grilled fish taco, and one Manhattan clam chowder. We both enjoyed the Manhattan clam chowder (my first time trying it), and the fried/battered fish and scallops. The other stuff was bleh! I would come back just to try the other stuff that was on the menu. The non battered goods looked tasty too!

After lunch, we headed towards Point Dume State Beach. We had so much fun! The view was just breath taking. I loved how the trail was surrounded by yellow flowers all the way to the top! (I do not know what those flowers are called? Yellow Daisy?) Just gorgeous and a great place to take photos ^_^  I definitely recommend yalls to check it out! Perfect place to bring that special someone on a date too *wink wink* Enjoy.

I heart Disneyland

The happiest place on earth just got happier! I have been wanting to go to Disneyland for some time now to check out the new Cars Land and have Calvin try Earl of Sandwiches (located in Downtown Disney). We spent a little over 8 hours on a beautiful Sunday hanging out at Disneyland and California Adventure! Love love love!!

Cars Land was so much fun! The Disney team did an amazing job — all the details looked just like the movie! The main attraction, Radiator Springs Racers, was the best part of Cars Land. I hear the wait for this ride may be up to 2 hours long, but the trick was to wait in the ‘single riders’ line. Calvin and I only waited for 25 minutes tops, and we were still able to ride in the same car. I highly recommend a visit to Cars Land at least once. I know I am ready to go back to Disneyland again.

One of my favorite sandwich spots! The first time I tried Earl of Sandwich was in Las Vegas and have been waiting for them to branch out to California. Finally, they open a restaurant in this side of town! Woot woot! Make sure ou check it out. So good 🙂

Our first | Spaghetti Squash

When I was in dental hygiene school, I had a classmate who would always rave about her spaghetti squash and how it was the best thing ever. I never really understood much about this vegetable, so I decided to give it a try many years later.

Calvin and I went to Trader Joe’s and bought one spaghetti squash for $2.99 and a few other ingredients to cook the spaghetti sauce! Surprisingly, there was instructions on the sticker of the squash, so we did not need to go online to figure out how to cook the squash. The instructions was rather simple…you could either bake, boil, or microwave. We decided to bake the squash. Slice the squash long ways and dig out the center. Then preheat the oven to 350 degrees and place the squash faced downward like the photo below, for about 20 minutes. Once the squash was tender, I was amazed at how easy it was to string out the squash into spaghetti strings. It was similar to carving out a pumpkin. You could easily use a fork to string out the squash. We decided to use the actual squash as our serving bowls! This was definitely easy to cook and fun to eat! Plus, it’s healthy!! Win win win! Enjoy.

Manhattan Beach Post | Winner Spot! Must order:: warm bacon cheddar buttermilk biscuit with maple butter spread..oh yah, this will definitely melt in your mouth! We loved their chicken pot pie, who doesn’t love chicken pot pie?! White oak grilled skirt steak with grilled broccolini and red chimichurri. We didn’t care too much for their brussel sprouts — it was a little bit on the sweet side.

Wood and Vine | Happy Birthday to my beautiful sister, Jenny! Every single dish was delicious from the brussel sprouts to the pork sliders! I definitely recommend going with a big group, so you could try more dishes! Enjoy.

Hama Sushi | My girlfriends and I were all craving sushi one evening, and our good high school friend, Hung, recommended this spot! Boy oh boy, were we in for a treat! The fish was extremely fresh and tasted like butter, just the way I love my sushi. If you are looking for some legit sushi, this is the place to be ^_^ Happy tastebuds.

Nicaragua baby

Hello friends, Sorry for the late post on my Nicaragua trip. Calvin and I brought in the new year Nicaraguan style! We had such a great time. It was our first time visiting Nicaragua. I love the culture, weather and food! The fruits was AHHHmazing! I  ate passion fruit every single day, and sometimes three times a day! The seafood was also really good and the price was very reasonable. I’m talking about $15.00 for a good sized lobster tail. There cheviche was delicious, especially eating them with some plantain chips.

On one of the days, we took a ferry ride to Ometepe Island, which means an island with two volcanos. While our day trip in Ometepe, we went on a zip line tour, swam at the Oja de Aqua (Natural Mineral Spring), visited a museum and had lunch at a local restaurant.

We stayed at the Aqua Wellness resort, which was about a 2.5hr drive from the airport. It was definitely a secluded resort with 50 cabins and we had our own private beach. The only con about our resort is that we would have to hire a driver to take us into town. Otherwise, it was a really nice resort. A great way to get away from the noise.

I would definitely come back to visit Nicaragua. There were still a few cities that I didn’t get to visit! Enjoy!
